Broccoli Bites

Being a vegetarian means l love vegetables. In fact, l love most vegetarian food; including tofu and pulses and many, many vegetables.

Having said that there are a few that l’m not keen on and one that l never want to eat again. Any guesses for that one; yes it’s brussel sprouts and l hope l never have to eat another one of those.

Broccoli is one that l’m not a great fan of but, have found a great tasty way to eat it. Cheesy broccoli bites are the answer for me. They’re easy to make and very, very tasty.

I normally have them for lunch so aim to make 6 or 7. The recipe l use is:

Steam your broccoli florets and then chop into bite size pieces.

Onion and garlic, as much as you like.

1 egg

Grated cheese, again, as much or as little as you like.

Breadcrumbs, l just break up a slice of fresh bread for these.

Sweet paprika.

Combine and roll into balls. Roast in 180 degree oven for 20 minutes, turning them after 10 minutes.

A medium size floret will make 1 bite so use that as a guide when deciding how many to make and l put sweet paprika in because l love sweet paprika. If you’re not such a great fan leave it out. Then sit down and enjoy.
